Once upon a time there was a volcano with its basaltic rocks. Then men arrived and began to cultivate Garganega. This is how the magic of Passito wine was born in Gambellara, a wine that is the main expression of welcoming and hospitality. El Vin del Ricordo (The wine of the memories) recalls us this story and the tradition of giving to your hosts a glass of your best wine, as a sign of honest welcome. The grape bunches, that previously have dried until March using “Picai” technique, ferment in 50 litres tanks in the attic. Then the wine ages for more than 15 years. The smell is very complex: cacao, coffee, liquorice, medicinal herbs and a lot of ripen fruit. The taste is warm, sweet and elegant, with an intense freshness. Typical sweet almond taste in the end.

Grape-harvest: hand harvested by mid-September with an accurate selection of the best bunches, which are then hung up with “Picai” technique and let them dry.
Vineyard: Garganega bunches come from the vineyard in “Brovia“ locality , average age of the vines is 30 years, 150 masl, volcanic soil.
Training system: guyot and Vicentine trellis.
Winemaking process: the bunches dry until March, produced in stainless steel tanks with spontaneous fermentation.
Aging: it matures in 50 litres special tanks for years.
Colour: shiny and golden.
Sensory profile: the smell is rich in complex aromas such as cacao, coffee, liquorice, medical herb and ripen fruit. The taste is warm, sweet and elegant, with an intense freshness. Typical sweet almond taste in the end.
Pairings: it’s very interesting to pair it with matured cheese and jams in general. It’s an excellent meditation wine. Perfect with pastries and almond paste.
