The Garganega di Gambellara, freshness and warmth of a volcanic land. A mature and serene wine: it knows its roots, it trusts in the future. A refined memory, the reflection of the horizon, the pampering of the evening. In the long journey of knowledge of my land this wine represents a new chapter, an unprecedented interpretation of Garganega. With a long contact with the skins and sur lie ripening I extracted the deep soul of the grape, a mix of strength and depth supported by an innate grace. A glass to be enjoyed alone or with structured dishes.

Grape variety: 100% Garganega
Grape harvest: overripe grapes hand picked by the end
of October in crates
Vineyard: the grapes come from the vineyard in Brovia area, the average age of the vines is 45 years, 200 m.a.s.l., volcanics oil
Training system: pergola vicentina
Winemaking process: the grape bunches are destemmed and ferment with their skin without adding any chemical product. On the 3rd day of fermentation the grape seeds are removed.
Wine aging: the wine lies for 120 days with the skins and matures on its yeasts in stainless steel tanks for 10 months until bottling.

Colour: brilliant orange
Sensory profile: ripen and delicate fruit, balsamic feeling on the nose. The taste is mineral and salty, a bit tannic it dries your mouth. Great structure, well balanced. Slightly bitter aftertaste of almond which is typical of Garganega grape variety.
Pairings: perfect with blue cheese. It stands out with structured first courses and white meat.
Serving temperature: 12-14°C
